Microsoft today for Beta channel Windows Insider program members, released for Win11 KB5031451 update, users install the version number to Build 22635.2483.
Microsoft recently adjusted the Beta channel, no longer splitting Build 22621.x and Build 22631.x preview updates, but unified use of Build 22635.x updates.
Win11 Build 22635.2483 update is as follows:

Microsoft updated the colour font format to COLRv1 in Build 22631.2265 to display richer emoji with a 3D-like appearance.

In the new preview, however, Microsoft says it is temporarily disabling these formats and will re-enable them in a future Beta update after some bugs are fixed.
